Mini Buttermilk Brioche Buns

These mini Brioche buns are sturdy, delicious, and have a soft top crust. Perfect size for a snack of your favorite mini sandwich, or filled with a cornucopia of delectables, or or any fruit preserve. These mini brioche buns are absolutely delicious even on their own. Ingredients

4 cups all-purpose flour plus

(2 tablespoons extra)

1/4 cup milk powder

3 tablespoons sugar

3 teaspoons active dry yeast

1 1/2 teaspoons salt

1 1/cups buttermilk

1 large whole egg at room temperature

1 egg white only at room temperature

1/3 cup room temperature butter


For egg wash:

1 large egg

1 teaspoon water

Steps:


Preheat oven to 400˚ F. Line 2 baking sheets with parchment paper.


1. In a stand mixer combine 2 cups of flour, sugar, yeast and salt.

2. Mix room temperature butter and buttermilk and warm it in the microwave in two increments of 40 seconds, until warm and well combined.

3. Add butter mixture to the flour mixture. With a dough hook mix it, add the egg and knead on medium speed for 5 minutes. Add 1 tablespoon flour or two at the end ti the dough to help it leave the sides of the bowl.


4. Add the soft room temperature butter at the end to the dough and knead it well for another minute or two until well incorporated.

5. Transfer dough to a buttered bowl and coat all sides of the dough with butter. Place the bowl in a warm place for the dough to rise for an hour or until double in size.



6. Place the risen dough on a well floured work surface and knead one more time and form a log. Cut 10 - 12 equal portions of the dough. Shape them into round smooth rolls with the sealed side on the bottom.


7. Place the dough balls on a baking sheet lined with parchment paper about 2 inches apart. Gently flatten each piece on the top with the palm of your hand. Place the rolls in a warm place and allow to rise for 15 to 20 minutes.



8. Whisk an egg with water and brush each roll with the egg wash.


9. Bake at 350 F for 12 - 15 minutes or until the tops are brown in color. Halfway through the baking turn the pans for even baking and color. Once baked take the buns out and place them on a cooling rack.
