Cherry Tomato Confit

These tomatoes pack a massive flavor punch and can turn anyone into a tomato lover!



Confit essentially means to cook something in fat over a long period of time at a low temperature. These tomatoes are cooked in olive oil for about 2 hours with fresh herbs and garlic. They pop in your mouth and release an incredibly juicy, tangy flavor! Make these and trust me, you will not want to eat tomatoes any other way again.

Prep Time: 10 minutes

Cook Time: 1.5-2 hours

Serves: 3-4 people


Ingredients:

1 16.5 oz container of rainbow cherry tomatoes*

3-4 cloves of garlic, peeled and smashed

6-8 sprigs of fresh thyme (optional)*

1 tsp of chili flakes

salt and pepper

1/3 cup of extra virgin olive oil


Steps:

1. Preheat your oven to 300 degrees

2. Add the tomatoes to a baking dish. You want the tomatoes to fill the dish so try to use one that's not too large for the amount of tomatoes you have.

3. Add the smashed garlic, thyme leaves, chili flakes, salt, and pepper to the tomatoes

4. Drizzle in the olive oil and gently stir to make sure everything is well-coated

5. Bake in the oven until the tomatoes have wrinkled but not popped (about 1.5-2 hours)

6. Let cool 5 minutes, then break up the garlic cloves gently so they incorporate into the oil

7. Serve however you like! This would be great on toasts, pizza, pasta, the possibilities are endless


Serving suggestion: Crostini

1. Slice a baguette into slices of desired thickness and toast

2. Place a dollop of ricotta cheese on each slice of toast

3. Drizzle hot honey

4. Top with tomato confit

* cherry tomatoes: Feel free to use regular cherry tomatoes but if you can find the rainbow ones, they add a great pop of color to the final product.


* Fresh Thyme: Feel free to use any herbs you like! This would work well with fresh rosemary or basil as well.
