
Pav is an Indian version of the dinner roll, they are simple to make and taste amazingly delicious! Light, fluffy, and soft with just a hint of sweetness. Pav are served as an all time favorite street food bread with many snacks, its so versatile it can be served for breakfast, lunch, dinner and snacks. Baking breads or Pav is one of the simple joys in life, plus the aroma of freshly baked bread or Pav is deeply satisfying. After trying a few recipes, this Pav recipe is a keeper.
Prep Time: 20 minutes
proofing: 1 and half hour
Cook Time: 25 - 30 minutes
Yield: 9 Pav
Ingredients
All purpose flour - 3 Cups
Milk powder - 3 tbsp
Yeast - 2 1/4 tsp
Sugar 2-tspoi
Warm milk - 1 Cup
Warm Water - 1/2 Cup
Oil 2 tbsp
Steps:
1. Combine the plain flour, milk powder and salt, mix well in a bowl and set aside.
2. In the bowl of a stand mixer combine milk, warm water, along with sugar and yeast, mix well and keep aside for 10 minutes to proof.
3. Add the dry mixture to the proofed yeast. Using the dough hook mix and knead into a sticky dough. Try not to add extra flour. If the dough is dry and crumbly add a little extra water upto 2to 3 tablespoons of water can be adde. The dough should be soft and hydrated.

4. Oil the dough and cover it. Leave in a warm place to rise for an hour or till it doubles.

5. Put the proofed dough on a clean work surface, sprinkle a little flour on it and knead again, folding the dough over itself, do this a few times about 5 to 7 minutes. When you insert a fingertip into the dough it should bounce back clean, which means the dough is ready. The dough should be soft and smooth.
6. Divide the dough into 9 equal portions. You could use a kitchen scale for measuring equal portions.

7. Roll each portion of the dough into a smooth round and place them an inch apart, in the greased pan. Lightly pat them with wet palms. cover them again with a damp cloth or plastic wrap and keep aside for 20 or 30 minutes to rise or double in size.

8. Brush the dough with milk or water.
9. Bake in a pre-heated oven at 375 F degrees for 25 to 30 minutes. Or untill the top has turned a light golden brown. Take the pav out to cool on a rack. Serve warm with butter.

Proofing the yeast and the dough well takes patience and a few tries. But the rewards are so satisfying and delicious!
