Soft Wool Roll Bread (Savory and Sweet)


Soft and fluffy this pull-apart milk bread is a nice addition to your breakfast or coffee snack and you will absolutely love this pillowy soft bread. I have made two of these breads with a savory and a sweet filling. You can try both, just double up the recipe as I have.

PREP TIME 15 mins

BAKE TIME 25 mins

RESTING TIME 2 hrs

Dough recipe

1/3 cup luke warm milk

1 tsp instant yeast

3 tbsp granulated sugar

2 cups + 3 tablespoons all purpose flour

3/4 tsp table salt

1/2 cup room temperature milk

1 large room temperature egg

3 tbsps unsalted butter room temperature

8 inch round baking pan

FILLING


6 tbsp sun dried tomato pesto

3/4 cup Chopped scallions

Or

3 tbsps raisins

3 tbsps goji berries

Steps

1 In a small sauce pan, bring the milk to a warm temperature. It should feel lukewarm and add in active dry yeast and leave it for 10 minutes.

2. In the bowl of your stand mixer, with the hook attachment, mix together flour, sugar, egg and salt. Then, add the milk yeast mixture and beat on medium for few minutes until the dough comes together and does not stick to the sides of your bowl. Lastly add the butter in small portions and k was the again until all the butter is well incorporate.


3. Oil the dough and cover with a plastic wrap and leave it to rise for about 1 hour, at room temperature, until double in size.

4. Once the dough has doubled, punch the dough down onto your working area and divide the dough into 5 or 6 equal segments.



5. Roll each portion into a ball. Then take one ball and roll out into a thin oval shape. place a tablespoon pesto on one broad side of the rolled oval and top it with chopped scallion.



6. Cut fine cuts with a knife on the top end of the oval very closely. Gently fold the sides in and roll the dough up all the way Until you reach the end of the oval and seal the ends of the finely cut edges. Place it against the wall of the baking pan. Repeat until you have used all your dough.





7. Once again, leave your dough to rise for another hour, at room temperature, until double in size.



8. Preheat oven at 350F

Lightly brush the soft Roll Bread with a little bit of milk.

Bake for 18 - 20 minutes at 350F.
