Shape pastry 15 min
Bake time: 30 minutes
Makes : 6
Ingredients for dough
1 1/3 cup flour
6 tablespoons softened unsalted butter
1 tablespoon sugar
1 teaspoon lemon rind
2 tablespoons heavy cream
1/2 tablespoon yogurt
1/2 teaspoon salt
Filling
2 medium grated Granny Smiths apples
1 medium Golden Delicious apple
2 tablespoons brown sugar
1/4 cup chopped walnuts
1 1/2 teaspoon cinnamon
1/8 teaspoon all spice
1/8 teaspoon nutmeg
Steps
1. In a bowl beat room temperature softened butter lemon rind and sugar until creamy.

2. Add salt along with cream and yogurt and mix well.
3. Slowly add in the flour in two portions and knead the dough for five minutes. The dough should be very soft and smooth. You can add a spoon or two of flour if the dough is sticky.

4. Refrigerate the dough covered for 15 minutes to half an hour.
5. While the dough is chilling we can make our apple filling, by peeling and grating the apples. On medium heat cook the grated apples until the apples are half cooked, then add the sugar (add brown sugar for a rich dark colored filling or white sugar for a light golden colored filling), along with the spices and cook for few more minutes until all the moisture dries up. Cool the apples add chopped walnuts and set aside.

6. Place dough on the work surface, knead again for a minute and make 6 equal size balls along with 6 tiny equal dough balls.

7. Roll the large dough balls into a very smooth shape and keep aside. Take the tiny dough balls and roll them out into thin long stretchy lengths about 7 to 8 inches long without cracks.
8. Place the large dough ball and roll it out into a flat thin round about 5 inches wide, keep even thickness all over and place a heaping tablespoon of the apple walnut filling in the center, start folding the edges together and seal it. Make a smooth round shape.

9. Assemble the apple pie ornament by placing the rolled out thin dough in a swirl or a circle around the filled dough. Place one end of the thin dough under the filled dough pressing it into the dough to seal it, then swirl it on the ball one time bringing it up to the top and make a circle on the top of the filled dough, resembling an ornament. Lightly press the thin dough to seal it to the filled dough. Shape it well. Refrigerate again for 15 minutes.

10. Bake in a preheated oven at 350 degrees F for 25 to 30 minutes or until light golden brown. Apple pie ornaments are deliciously embellished as ornaments and ready to serve.
