Spiced Gingerbread Loaf



Gingerbread is a classic holiday dessert that you will love! It’s moist and delicious with it’s crunchy walnut topping. A heartwarming dessert on any cold winter morning, a slice of this gingerbread pairs perfectly with a hot cup on coffee. while it bakes in the oven, its aroma fills your home with heavenly nutmeg and ginger. It doesn’t get much better than this homemade gingerbread my friends!


Cook Time: 50 - 55 mins

Total Time: 1 hr 05 mins

Makes 1 loaf

Prepare a a 9×5 loaf pan by lightly spraying with a nonstick cooking spray and set aside.


Ingredients

For the loaf:

1 stick unsalted butter, room temperature

2 cups all-purpose flour

1 cup applesauce (I used homemade)

2 tbsp milk

1 tsp baking soda

1/2 tsp baking powder

1 tbsp ground ginger

2 tsp ground cinnamon

1/2 tsp all spice powder

1 tsp ground cloves

1/2 tsp nutmeg

1 cup sugar

1 tbsp dark molasses

1 1/2 tsp vanilla extract

1 tsp salt

1 egg

chopped walnuts, for topping (optional)

Steps:


For the loaf:

1. Preheat oven to 350F degrees. Spray a 9x5 loaf pan lightly with nonstick cooking spray and place parchment paper in the pan for easy removal of the loaf.


2. Using a stand mixer or an electric mixer, cream together the butter and the sugar until fluffy. Beat in the vanilla and the egg. Blend in the applesauce for a minute.


3. Slowly add the flour, baking soda and spices (ginger, cinnamon, cloves and nutmeg). When everything is mixed, pour the batter into your loaf pan.



4. Bake for about 55 minutes until it is risen and a toothpick comes out clean.
