Crispy Tofu, Broccoli, Pepper, and Cashew Stir-Fry

This dish is is packed with flavor and has a great mix of textures that make it a great dinner option!



This dish is a great way to showcase how delicious tofu can be if you haven't been the biggest fan of this protein in the past!

Prep Time: 15 minutes

Cook Time: 30 minutes

Serves: 3-4 people


Sauce:

1 1/2 tbsp brown sugar

1/2 tbsp honey

3 tbsp hot water

3 tbsp soy sauce

1/2 tsp lemon juice

1/2 tbsp corn starch

1/2 tsp fish sauce (optional)

1/2 tbsp Sriracha (optional)


Tofu:

1 block of extra firm tofu

1 1/5 tbsp corn starch

1/2 tsp salt

1/4 tsp garlic powder

2-3 tbsp vegetable oil


Stir Fry Veggies/Nuts:

1/2 head of broccoli

1 bell pepper

3/4 cup halved or chopped cashews

3 cloves of garlic


Steps (sauce):

  1. In a medium bowl, combine the brown sugar, honey, and hot water - stirring until dissolved

  2. Add in the soy sauce, lemon juice, corn starch, fish sauce, and Sriracha

  3. stir until the sauce is well-combined, and then set-aside

Steps (tofu):

  1. In a wok or large saucepan, heat up the oil (medium heat)

  2. Drain the tofu and cut into even 1/2 inch cubes

  3. Once the oil is hot, carefully add the tofu

  4. Pan fry until all sides are golden brown (picture below), adding more oil if needed and set aside


Steps (Stir Fry):

  1. Mince the garlic and set aside

  2. Chop the bell pepper into small cubes and set aside

  3. Chop the broccoli into small-medium florets

  4. In some boiling water, cook the broccoli for 2-3 minutes or until slightly shy of tender (broccoli will finish cooking in the wok/pan)

  5. Remove broccoli from the water and set aside

  6. In the same wok or frying pan used for the tofu, add some more vegetable oil if needed and heat at medium

  7. Once the oil is hot, add the broccoli, bell pepper and cashews

  8. cook for 2-3 minutes

  9. Add the minced garlic and cook for another 1-2 minutes or until the garlic is fragrant




10. Add the tofu and sauce mixture to the wok/pan

11. Stir until sauce begins to thicken slightly

12. Remove from heat and top with sesame seeds if desired!



Serving suggestion: Jasmine rice, brown rice, or quinoa
