Instant Pot Loaded Potato Soup


A simple comfort food recipe! A meal by itself or served with your favorite bread it is so heart warming and satisfying. The best part, its an easy recipe for busy people and it’s so effortless, yet so delicious!

Ingredients

3 Tbsp of Unsalted Butter

4 Slices of Bacon

1/2 cup of All Purpose Flour (mixed in 1/2 cup water to make a a slurry, keep it ready tor use)

4 to 5 large Potatoes peeled and diced into small pieces

1 Medium Onion, diced

1 medium carrot diced

2 tsps minced garlic

1 bay leaf

1/8 tsp paprika

1/4 tsp all spice

1/4 tsp cinnamon

1 tsp black pepper

1 tsp basil

4 cups of Chicken Stock

1/2 cup heavy cream

1/2 cup of Sour Cream

1 /2 cup of Shredded Sharp Cheddar

Chopped Green Onions

Salt and Pepper, to taste

Steps:

1. Turn on the Instant Pot on sauté mode place butter in the pot and heat it until its melted, add in the chopped bacon and cook, remove the cooked bacon in a small bowl for later use. In the same left over fat cook onions for 3-4 minutes until soft and transparent. Add in the garlic and cook until fragrant, stir it constantly so that the garlic does not burn.



2. In a bowl mix together the flour and water to make a slurry and add it in the instant pot along with the chicken broth, diced carrots and diced potatoes, make sure there are no lumps in the soup base. Lastly add all the spices to the pot, with the bay leaf and stir well.


3. Place the lid on the Instant Pot and cook on pressure cook for 12 minutes approximately. Leave the instant pot lid on and let the potatoes cook until all the pressure has released. Open the pressure cooker only after the float valve has depressed, indicating it’s safe to open the pressure cooker, and it has released the pressure, carefully open the lid slowly. It’s time to mash any big chunks of potatoes to make a purée and leave a few chunks for a bite.


4. Add the sour cream and heavy cream and cook for 2 more minutes without the lid. Lastly add cheddar cheese and stir until melted.



4. Serve garnished with the cooked left over bacon, green onions, and more cheese. Season to taste.
