Lavender Lemon Cookies

These simple lavender lemon cookies are a special spring treat, light buttery sugar cookies infused with the floral flavors of both dried culinary lavender petals and lemon, they are sure to bring a smile on your face and taste so good.

Ingredients

2 cups all purpose flour

1 cup granulated sugar

1/2 cup unsalted room temperature butter

zest of 1 large lemon

1 large egg room temperature

1 1/2 tablespoon culinary dried lavender

2 tablespoons lemon juice

1 1/2 teaspoon pure vanilla extract

1 teaspoon baking soda

1/2 teaspoon salt


Topping

1/4 cup granulated sugar for outer coating

1 drop violet gel color optional


Steps

1. Preheat oven to 350 degrees F.

Line baking sheet with parchment paper and set aside.


2 In a bowl mix together sugar, lemon zest, and crushed lavender mixture and mix them well together between your fingers.


3. Beat together the soft butter with the sugar/lemon zest/lavender mixtute with an electric mixer on high for 1 minute.


4. Gradually add lemon juice, egg, and vanilla extract and beat until well combined add baking soda and salt, and mix until combined.

5. Slowly add flour and mix until well combined.


6. Spread a plastic wrap on the counter and place dough on it and roll into a long log about 2 inches wide and keep it on one end.


7. Mix the topping sugar with gel color and spread on the plastic wrap everywhere.

8. Roll the log slowly on the sugar and coat it well with the colored sugar. Seal the log with plastic wrap and refrigerate for half an hour.


9. Take the chilled cookie dough out and cut into 1/2 inch thick round slices. Place them on the prepared baking sheet, about an inch apart.


10. Bake in preheated oven for 15 minutes, until edges are a light golden brown.


11. Let them cool for 8 to 10 minutes on the baking sheet then transfer to a cooling rack to cool.
