Mango Shrikhand

A creamy dessert infused with aromatic cardamom and saffron



Mango Shrikhand is a summertime traditional Indian dessert made with thick yogurt and fresh mango purée or pulp. Saffron adds a nice color and unique flavor. You have to taste and experience this refreshing dessert!

Prep Time: 10 minutes

Cook Time: 10 minutes

Serves: 4-6 people


Ingredients:

2 1/2 cups Greek yogurt

1 1/2 cup thick mango purée* (fresh or canned Alphanso mangoes)

4 tbsp sugar or honey

1/2 tsp green cardamom

2 tbsp lukewarm milk

1 fresh mango cubed

1/2 tsp Saffron strands (optional)

Chopped pistachio or almonds (optional)


Steps:

1. Combine saffron strands in lukewarm milk and set aside

2. In a bowl beat the Greek yogurt to a creamy, smooth consistency. (You can use a hand blender or a whisk)

3. Add the mango puree*, saffron-milk mixture, sugar/honey and cardamom powder to the bowl

4. Stir all the ingredients until well combined

5. Refrigerate to chill before serving for at least 1 hour


Serving suggestion: Serve the shrikhand in a bowl topped with fresh cut thin cubes of mango. Garnish with chopped nuts and additional saffron strands


* Fresh Mango Puree: Cut 2-3 Alphonso mangoes into 1 inch cubes and add to a blender. Puree to a smooth consistency. Use a strainer to remove any fibers or lumps and set aside.


* Canned Mango Puree: When fresh mango is not available, use canned mango puree or frozen mango pulp. Canned puree tends to be sweeter so adjust the amount of sugar in the mixture.
