Mango Shrikhand

A creamy dessert infused with aromatic cardamom and saffron.



Mango Shrikhand is a summertime traditional Indian dessert made with thick yogurt and fresh mango purée or pulp. It is a creamy smooth dessert to which we can add chopped nuts and infused with aromatic flavors of cardamom, and saffron it is heavenly. The taste and fragrance of cardamom with mango in shrikhand is refreshing and yummy. Saffron adds a nice color and an unique taste, you have to taste and experience this dessert to know.


Serves 4 - 6

Prep time : 10 minutes

Refrigerate : 1 hour

Cook time : 10 minutes


Ingredients

2 1/2 cups Greek yogurt

1 1/2 cup thick mango purée (Alphonso mangoes fresh or Canned)

4 tbsps sugar or honey

1/2 tsp green cardamom

1/2 tsp Saffron strands (optional)

2 tbsps milk

1 fresh mango cubed

Pistachio or almonds

chopped(optional)


Method

1. Combine saffron strands in lukewarm milk and set aside.

2. In a bowl beat the Greek yogurt to a creamy, smooth consistency. (You could use a hand blender or a whisk).

3. To the Greek yogurt add saffron milk, sugar(honey), cardamom powder and blend again .

4. Refrigerate to chill before serving.


Assembly

Serve the shrikhand in a bowl topped with fresh cut thin cubes of mango.

Garnish shrikhand with chopped nuts and saffron strands as decoration or topping.


Fresh Mango Puree

Clean mangoes and cut them into cubes and in a blender puree the to a smooth consistency, add sugar as per taste and let chill in refrigerator . (Use ripe and sweet Alphonso mango for the puree). Always use a strainer for the fresh mango purée to remove any fibers or lumps.


Canned Mango Puree

When fresh mango is not available just use tinned mango puree or frozen mango pulp. Adjust the sugar amount if the purée is sweet.
