Swedish Almond Cake


Swedish Almond Loaf Cake is a dense cake with sweet almond topping, its amazingly easy to make and full of wonderful almond flavor it’s very addictive. The cake is a little spongy and very moist, its perfect with coffee or tea. It’s perfect without any icing and with icing. The pan I bake this in is called a Half Roll Bake pan and it adds such simple elegance to this scrumptious cake. Thanks to the corrugated ridges in the pan, the cake slices are pre-portioned and makes the cake look really pretty.


Ingredients:

1 1⁄2 cups flour

3 tablespoons almond flour

2/3 cup milk

1/2 teaspoon baking powder

1/2 cup butter

1 1/4 cups sugar

2 eggs

1 1/2 teaspoon almond extract

1/2 teaspoon vanilla extract

1/4 teaspoon salt

zest of 1 lemon (optional)

1/4 cup sliced almonds, for topping

FOR ICING: (optional)

1/2 cups powdered sugar

3 -4 tablespoons heavy cream

2 drops almond extract

PREP: 5 Minutes

COOK: 30-40 Minutes

Yields: 1 loaf

Steps:

Preheat oven to 350 degrees F. 1. Prepare a half roll pan with baking spray and set aside. you could use a 8 or 9 inch round pan.



2. In a medium bowl, whisk together flour, almond flour and baking powder.

2. In another bowl, beat sugar, egg, almond extract, and milk until smooth.


3. Add flour mixture and blend thoroughly. Lastly, add melted butter and stir until fully combined. Pour into the prepared pan and lightly tap a few times.



4. Bake for 30-35 minutes, until cake is golden brown, and a toothpick inserted into the middle of the cake comes out clean. Allow cake to cool completely.


5. Cool cake completely before turning out. In small bowl, blend powdered sugar, milk and vanilla to desired consistency. Pour on top of cooled cake and sprinkle with almonds.


Make Icing:

In a large mixing bowl, combine powdered sugar, cream, and almond extract. Mix until smooth and creamy. Pour over the cake and add almond slices.
