Whole Wheat Pumpkin Walnut Bread



I’m excited about fall and looking forward to more pumpkin treats. Baking this spiced homemade pumpkin bread is so satisfying for my pumpkin cravings. It’s soft, moist, and fragrant. It will warm you up and get you ready for the holiday season.


INGREDIENTS

1 3/4 cups whole wheat flour

1/3 cup vegetable oil

2/3 cup sugar

2 eggs room temperature

1 cup pumpkin purée (fresh or canned)

1/3 cup milk room temperature

1 1/2 teaspoons pumpkin spice blend *

1 teaspoon baking soda 

1 teaspoon vanilla extract

1/2 teaspoon salt

1/2 cup chopped walnuts

2 tablespoons raisins optional

2 tablespoons pumpkin seeds for sprinkling on top (optional)


Steps

1. Preheat oven to 325 degrees F and grease and flour a 9×5-inch loaf pan. Alternatively, you can line the pan with parchment paper. In a bowl combine the dry ingredients: flour, salt, baking soda, and spice blend, mix well and set aside.

2. In a separate bowl mix oil and sugar together with a whisk. Add the eggs and whisk until well blended.




3. To the wet ingredients add the pumpkin purée, milk, vanilla and whisk to blend, to this add in the dry flour mixture and mix just until well combined. Lastly add nuts and raisins, and gently fold them in now.



4. Pour the batter into the greased loaf pan and if you like sprinkle pumpkin seeds all over the loaf for taste and decoration.




5. Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean. Cool the bread in the loaf pan for 10 to 12 minutes, before carefully placing on a cooling rack to cool for before slicing. The bread is very soft and moist so use a good bread knife for slicing.



* Pumpkin Spice blend

3/4 teaspoon cinnamon

3/4 teaspoon ground ginger

1/4 teaspoon ground nutmeg

1/4 teaspoon allspice or cloves
